Gingerbread sandwich ready for the freezer

Make gingerbread sandwiches
I bought a package with gingerbread house. Partly because the store was out of ordinary gingerbread, but also because these finished plates can easily be divided into suitable sticks for gingerbread poppers. Spread a good layer of cheese on the gingerbreads and make these into small sandwiches. Some of the cheese will disappear when you put them on the grill later, so do not be modest with the cheese. Put the finished gingerbread sandwiches in the freezer for an hour or two before wrapping them in bacon.

Its a Wrap!

Bacon bacon bacon
Heat the grill and set a temperature around F 250. Take the gingerbread sandwiches out of the freezer and wrap them in bacon, making sure that the end of the bacon ends up on the underside of the gingerbreads, so the bacon stays in place when you grill them. Sprinkle a good layer of rub all over. Place them on the grill until the bacon is brown and crispy. (about 50-70 minutes)

Tip: Place the gingerbread pops on an extra rack, so they are easier to take out when they are done!

Cool down
When the gingerbread comes straight from the grill, they are very soft, so let them rest on the kitchen counter for 10 minutes before serving. Meanwhile, you can cook together some mulled wine, peel a clementine, find a good Christmas classic on your favorite streaming service. Or maybe you even have your favorite movie on a good old-fashioned hard copy in the form of a Blu-ray or DVD !! Anyway, ENJOY!
