Pineapple or “anana” (excellent fruit) is well known as a side in the barbecue world. On the burger, in a salad, as a dessert or as the world’s biggest ugliness: limp pineapple on pizza, yuuuk. But stuffed pineapple on the grill on the other hand, is good. You can fill it with whatever you want. This time it was leftovers from some tacos the other day. It’s neither low calorie nor low carb, but GOOD, it’s. It takes about 1-1.5 hours to make this.

Stuffed with goodies

What you need:

  • 1 whole pineapple
  • bacon
  • BBQ sauce
  • Left over taco meat
  • Beansalsa
  • shredded cheese
Ready for the grill

Stuff it all to the edge
Set the grill or oven at 400F degrees. Cut off the top of the pineapple (save this for plating), take a knife and cut a cross in the middle of the pineapple. Leave a good ring on the outside. Use a spoon to dig out the middle. Then cut off the skin, being careful not to make holes in the pineapple itself, it should be filled to the brim with goodies. Wrap the bacon strips well and tightly around the pineapple, leaving it open at the top. Mix together the filling (Taco meat, beans, cheese and a little bbq sauce) and fill the pineapple with this. Save some of the sauce, used to brush the bacon with it later.

Grill
Put the pineapple with all the goodies in, vertically in the grill and leave it like this for 20-30 minutes. After 20-30 minutes, brush the bacon with a little bbq sauce and leave it for another 30 minutes, preferably brushing twice during this time. The pineapple is ready when the bacon has turned golden and crispy. Stuffed pineapple is the perfect accessory for, for example, spare ribs.
