I’ve never made this before, but I’ve eaten bread bowl before. And since my wife is hooked on sourdough lately, I was really looking forward to make some my self. Bread bowl and especially sourdough bread is perhaps best known from San Francisco, but was actually first discovered in Ireland in the 15th century. To succeed with a bread bowl, you first of all need some fresh, good bread. You can of course buy this in a store somewhere, but if you make it yourself, it will be even better. This time, we assume that you have finished making the bread, but I may come up with a recipe for this on a later occasion.

What you need:

  • Sour dough bread
  • Left over pulled chicken or pulled pork
  • 1 dl white wine
  • 3 Tbs brown sugar
  • BBQ-sauce
  • 50g butter
  • 1/2 lime
  • 1/2 onion
  • 150g shredded Cheddar cheese

Cut the top off
Start with the bread. Cut off the top, let the knife have a slight angle so that the bread lid has a “cone shape” to plug back nicely to the bread bowl. Set the “lid” aside, and dig out the bread in the middle, so you get a bread bowl. Be careful not to make any holes in the bread, and leave some bread at the edges to soak up those delicious fluids later

Stuffing
Set the grill or oven to about 350F. Finely chop the onion and toss the butter in a hot pan. Saute the onion for a few minutes before adding the wine, let it reduce slightly, before adding some Bbq sauce and the chicken. Sprinkle some of the Cheddar cheese in the frying pan and squeeze the lime juice over. Add brown sugar and let it simmer for a few minutes until it thickens a little, there should be some liquid in the filling that should soak into the bread later.

Go total “Stuffin Mc Muffin” and put some grated cheese in the bottom of the bread bowl, then put in the stuffing and sprinkle cheese on top. Put the lid back on. Put the whole bread bowl in the oven or on the grill and let it heat up for 5-10 minutes so that the cheese melts. Serve hot of the grill and top with some fresh herbs. A couple of mint leaves put a nice ttouch on the dish. There you have it, a delicious bowl of bread, enjoy yourself!
